Description

Black Beans with Bell Peppers, Onions and the classic Cuban spice profile, Cumin, Oregano and Bay Leaves.

Ingredients

(2) 15.5 ounce cans of Black Beans (Do not drain the liquid) 1 cup of white onion, diced 1 cup of green bell pepper, diced 1 teaspoon chicken Bouillon (Or vegetable if you want to keep it vegan) ½ teaspoon dried oregano ¼ teaspoon Cumin ½ teaspoon black pepper Kosher salt to taste (I use a ½ teaspoon) 2 bay leaves Fresh Cilantro to taste (I use about ½ teaspoon) A rounded teaspoon of tomato paste 3 large cloves of garlic, minced ½ teaspoon light brown sugar ½ teaspoon red wine vinegar ½ to 1 cup of water 2 tablesp[oons Olive Oil, to saute the peppers and onions
