Black Beans with Bell Peppers, Onions and the classic Cuban spice profile, Cumin, Oregano and Bay Leaves.
Ingredients
(2) 15.5 ounce cans of Black Beans (Do not drain the liquid)1 cup of white onion, diced1 cup of green bell pepper, diced1 teaspoon chicken Bouillon (Or vegetable if you want to keep it vegan)½ teaspoon dried oregano¼ teaspoon Cumin½ teaspoon black pepperKosher salt to taste (I use a ½ teaspoon)2 bay leavesFresh Cilantro to taste (I use about ½ teaspoon)A rounded teaspoon of tomato paste3 large cloves of garlic, minced ½ teaspoon light brown sugar½ teaspoon red wine vinegar½ to 1 cup of water2 tablesp[oons Olive Oil, to saute the peppers and onions
